Issu de la fermentation des graines de n\u00e9r\u00e9 (Parkia biglobosa), un arbre embl\u00e9matique de la savane, le soumbala s\u00e9duit par son go\u00fbt profond et son odeur caract\u00e9ristique.<\/p><p>Pr\u00e9sent dans les cuisines du Burkina Faso, du Mali, du Niger et d\u2019autres pays voisins, il est un ingr\u00e9dient phare dans les repas ; que ce soit dans une bonne sauce gombo, une sauce feuille ou m\u00eame dans le riz, le soumbala change tout. Il donne cette profondeur, ce go\u00fbt un peu sal\u00e9, un peu fum\u00e9\u2026 difficile \u00e0 d\u00e9crire, mais impossible \u00e0 oublier. V\u00e9ritable exhausteur de go\u00fbt naturel, il apporte une touche unique aux plats tout en \u00e9tant riche en prot\u00e9ines, calcium, fer et 100% naturel.<\/p><p>Son usage a parfois \u00e9t\u00e9 d\u00e9laiss\u00e9 au profit des bouillons industriels, mais le soumbala reste un symbole de savoir-faire local, de sant\u00e9 et d\u2019identit\u00e9 culturelle.
